Soup is a great way to get your five plus serving of vegetables a day, especially on a cold winter’s day. There’s nothing better than being cuddled up on the couch, wrapped up in a crocheted blanket my grandmother made, watching Grey’s Anatomy with a steaming bowl or mug of soup accompanied with crusty homemade bread.
I love creamy soups but don’t want all the calories cream or creme fraiche contains, so in this soup I tried adding in sweet potato so that when I pureed up the soup it added a similar creamy texture.
1x 400g tin of tomatoes – I like the ones with basil already added in.
1x onion – I like red onions – finely chopped
1x beef tomato (just for a little bit more texture) – chopped
1x sweet potato – peeled and diced
1x teaspoon of brown sugar – for a bit of sweetness
2 cups of vegetable stock – I use the powdered stock added to hot water
In a large saucepan with a little olive oil and the brown sugar, brown off the onion, beef tomato and sweet potato. Add the tinned tomatoes and the vegetable stock. Let simmer down until the sweet potato is soft then with a stick blender, blend until smooth. Serve with some crusty bread or toast.
